You can create lists on the website version of Mastodon, if you log in on your server's website. It's at the "Lists" link.

An alternative approach is to have separate accounts on separate servers for work and personal. This has the added advantage that if one server ever goes down you can log in on the other account and people will still be able to get in touch with you.
