Also, some of that looks like it's escaping orbit from Didymos. I wonder how that will affect the results on changing Dimorphos' orbit? (I.e. how much energy was lost accelerating small particles).

I'm sure they'll inculded it in the calculations of the new orbit. LICIACube's observations may be crucial to figure out the properties of Dimorphos' ground and the actual shape of the excavation caused by the impact.
