I think the page about character limits is slightly misleading: it could be taken as meaning that instances with a limit higher than 500 must be running something other than Mastodon. As I understand it, admins on Mastodon can easily change their instance's post length limit, i.e. long posts could well be from a Mastodon server. So the post length maximum & the data point of "there's lots of other software" are distinct.
