You're on different servers, and each server on the Fediverse stores its data separately.

Every now and then, your server will check the other server for the latest follower numbers, but it doesn't do this all the time because it would take up a lot of resources for something that isn't that important.

You will eventually see the numbers change the next time your server does an update for that account.

You can find the most accurate numbers right now by going to the account's own public profile page, because that is stored on their own server:
