Search for a hashtag, then click on the slider icon in the top right corner of the column and select pin. You can then search for another hashtag and it will appear in another column. The slider icon lets you do all kinds of stuff in this mode.

@feditips @matttwood what is a hashtag? I would also love to alter how things are ordered and displayed. Why isn’t there an obvious menu somewhere allowing customisation?
